Ladies Finger Pakodas

Ingredients
Small Ladies Fingers – 250g
A small ball of tamarind
Rice Flour – ¼ cup
Bengal Gram Flour – ½ cup
Chilli Powder – ½ tsp.
Garam Masala – ¼ tsp.
Dhania Powder – 1 tsp.
Turmeric Powder – as required
Salt – as required
Cardia Life Oil for frying

 
 

Method

  1. Cut the edges off the ladies fingers.
  2. Boil 2 cups of water with turmeric powder, tamarind and salt. Add the vegetables when it starts boiling.
  3. Remove from the stove after 2 minutes. Drain the water from the bowl and wipe vegetables dry.
  4. Prepare a batter with Bengal gram flour, rice flour, chilli powder, dhania and garam masala, adding salt.
  5. Heat Cardia Life oil in a kadai. Dip the ladies fingers in the batter and fry them.
  6. Serve pakodas hot with sauce.
 
 
 
 

Cheese Balls

Ingredients
Cooking cheese (grated) – ½ cup
Maida – 1 cup
Chopped coriander – 4 tsp.
2 green chillies, chopped
Salt – as required
Cardia Life Oil for frying

 
  Method

1.  Mix all the ingredients well to form dough, adding water and ensuring that no lumps are formed.
2.  Let the dough stay closed in the container for about half an hour.
3.  Shape the dough into amla-sized balls, or bonda-sized balls, if you wish.
4.  Heat Cardia Life oil in a kadai. Fry the balls till they are crisp and brown.
5.  Serve cheese balls hot with tomato sauce.
 
 
 
 

Peas Kachoris

Ingredients

Atta – ½ cup
Maida – 1 cup
Peas – ½ cup
Saunf paste – 2 tsp.
Ground Green Chillies (4 nos.)
Ground Ginger (1” piece)
Salt to taste
Cardia Life Oil for frying
 
 

Method

  1. Fry chilli, ginger and saunf pastes together, for a couple of minutes.
  2. Add peas and salt to the mixture & cook for 5 more minutes.
  3. Remove from heat and allow the mixture to cool. Grind it in a mixie.
  4. Mix atta, maida, oil and salt into a smooth dough.
  5. Shape the dough into small balls. Roll out the balls, place peas mixture in the centre and fold into pouches.
  6. Roll out the pouches like small puris and fry them in Cardia Life oil. Serve hot with green chutney.
 
 
 
 

Spinach Pakoras

Ingredients

3 dozen spinach leaves
Gram Flour – ½ cup
Pepper – ¼ tsp.
Jeera – ½ tsp.
Asafoetida – a pinch
Salt to taste
Cardia Life Oil for frying

 
 

Method

  1. Mix , spices and salt together. Add water to make smooth batter of thin consistency.
  2. Heat Cardia Life oil in a kadai.
  3. Dip the spinach leaves individually into the batter and fry them in oil.
  4. When the pakoras turn crisp and golden brown, remove them from fire.
  5. Serve hot with sauce.
